ADRIANA LINGUINE CHILLI STIR-FRY
Ingredients
Chilli sauce:
4 long red chillies, thinly sliced
3 garlic cloves
1 cup fresh coriander leaves
½ cup grated palm sugar
½ cup fish sauce
4 limes, juiced
One 5-cm piece of fresh ginger, peeled and sliced
Stir-fry:
600 g Adriana Linguine
1 tablespoon sesame oil
1/2 cup unsalted peanuts, coarsely chopped
500 g pork leg meat, sliced into thin strips
200 g green beans, sliced
1 small head of broccoli, cut into florets
3 cups fresh baby spinach
½ cup of fresh chilli sauce
1 cup fresh coriander leaves
Description
Do you like spicy? If so, let’s do it! First, prepare the sauce. Put chilli peppers, garlic, coriander, sugar, fish sauce, lime juice, and ginger in a blender. Mix until sauce is smooth. Cook the pasta in salted water according to the instructions on the package and strain. Heat the oil in a wok or large non-stick pan; add peanuts and stir-fry over high heat until golden. Remove the peanuts and set aside. Put sliced pork in the pan and stir-fry over high heat for about 3 minutes. Add beans, broccoli, and spinach and stir-fry again until tender. Add sauce to cooked pasta and toss to combine. Garnish with roasted peanuts and fresh coriander and serve immediately. It's great to be spicy!
