NORDIC STYLE ADRIANA BUCATINI WITH SALMON
Ingredients
600 g Adriana Bucatini
1 tablespoon salt
4 medium potatoes, diced
4 medium carrots, diced
¼ head of broccoli, cut into pieces
400 g salmon, skinned and deboned
3 sprigs of dill, roughly chopped
1 tablespoon butter
1 large onion, finely chopped
good quality soy sauce
300 g sour cream
freshly ground assorted peppercorns
Description
A delicious dish for special occasions, Salmon will never disappoint. This time, we’ve prepared it in a Nordic style with Adriana Bucatini pasta. Ideally, use a double boiler pot. The bottom part of the pot is used for cooking the pasta in salted water according to the instructions on the package. The top part of the pot is used as a steamer. Set up the steam basket over the bottom part of the double boiler pot and steam potatoes, carrots and broccoli. After 10 minutes, add salmon. Cook until the pasta is ready. (If you don't have the double boiler steaming pot, cook the pasta separately, and steam the potatoes, vegetables, and salmon separately, for about 15-20 minutes.) Put the dill at the bottom of the serving bowl, add steamed salmon, and combine; then, return pieces of salmon to the steamer and steam for 2 more minutes. Heat the butter in another pot and gently sauté the onions; then, combine cooked pasta and salmon with all vegetables. Season with a few drops of soy sauce. Add the cream and gently combine so that the salmon pieces do not break apart. Serve immediately and garnish with freshly ground pepper.
